I love my Kitchenaid! Besides helping me make lots of bread, it also allow me to play luto-lutuan. I tried to make garlic longganisa and it was good!
For guidance, I used the homemade longganisa v2.0 recipe from Burnt Lumpia. I was hardheaded. I refused to add so much fat in my longganisa. I can't imagine/accept/internalize that I will willingly add that much fat in something I am cooking homemade. I have always thought that manufacturers put so much fat in their longganisa for cheating puposes. My longganisa was good but it was a bit dry. Ok, I concede. I will add more fat next time.
